MDW Recipes | Quarantine Edit

Ahhhh, Memorial Day Weekend the official start of the summer, especially here in Jersey..... except the Rona decided to cancel outside! I think it's safe to say that this year's MDW will look and feel very different then any other year but I really am trying my best to celebrate these holidays at home with my family. I'm trying to make it as "normal" (whatever that is at this point) and memorable for my babies. So, although it won't be a BBQ with 40+ of our family members I still have some outdoor fun planned for the kids and you can too! We are so blessed to have a yard that we can all enjoy, so let's get to it! I put together some delicious easy recipes for this upcoming weekend and any weekend this Summer! Although I love to host, I have FOMO and hate being in the kitchen while everyone is enjoying themselves outside so my favorite thing to do is have most of my recipes done before anyone arrives.

Recipe 1: My Mom's Famous Bean & Corn Dip

The perfect appetizer with a mouthful of flavors, pairs perfect with Tostitos!

Ingredients

  • 1 Can of Corn
  • 1 Can of Beans
  • 2 Large Tomatoes
  • 1/2 Red Onion
  • 1-2 Jalapeños (depending on how spicy you want it)
  • Cilantro
  • Olive Oil
  • Red Wine Vinegar
  • Salt & Pepper to taste

Directions

Step 1: Wash and drain the corn and beans and put into a bowl large enough to hold all ingredients.

Step 2: Chop tomatoes, red onions, jalapeños and cilantro. For this step having a chopper is so useful! You literally get it done it 2.5 seconds. I use this one here. It is amazing and only $13! Pour all ingredients into bowl & give it a nice stir.

Step 3: Add your red wine vinegar, salt & pepper & chopped cilantro. I don't measure any of this because some like it saltier then others so just keep on adding salt to your liking. I like it to have a nice kick!

Step 4: Cover and let chill, I usually make this the night before and let it sit in the fridge. All the flavors come together so nicely after marinating over night! Serve with your chips of choice, I always buy Tostitos scoops! Enjoy!

Recipe 2: MDW Mocktail for Kids

Ingredients

  • 1 Blue Juice
  • 1 Red Juice
  • Swedish Fish (optional)

Directions

This is the easiest recipe, a MDW Mocktail for kids! All you need is a red juice and blue juice. I bought Honest Fruit Punch and Blue Gatorade. I added a cute little Swedish fish for decor as well. The trick to getting the juices to stay separate is to check the sugar content. Whichever one of your juices has more sugar goes first. In my case the Gatorade have more and then I slowly poured the fruit punch on top. Voila, lots of sugar and happy kids lol.

Recipe 3: Frozen Yogurt Bark


Another amazing treat for the kids AND its healthy. My kids were calling it ice cream and snacked on it all weekend!

Ingredients

  • 1 quart of Yogurt
  • 1 cup finely chopped strawberries
  • 1/2 cup finely chopped blueberries

Directions

Step 1: Get your baking sheet and place wax paper over.

Step 2: Pour container of yogurt and smooth out with a spatula.

Step 3: Sprinkle fruits over top and place in the freezer overnight.

Step 4: Take out 5-10 minutes prior to serving and break into bite sized pieces.

Recipe 4: Macaroni Salad

Okay, I am super picky about macaroni salad, I need flavor and crunch! I promise you this recipe has it!

Ingredients

  • 1 Box of Macaroni Elbows
  • 1/2 Cup Celery
  • 1/2 Cup Cherry Tomatos
  • 1/2 Cup Red Onion
  • 1/2 Cup Cucumbers
  • 1/2 Cup Red Pepper
  • 1/2 Cup Green Pepper
  • 1 Cup Mayo
  • 1/4 Cup Dijon Mustard
  • 1 Tbsp. of Red Wine Vinegar
  • 1 Teaspoon Salt
  • 1/3 Teaspoon Pepper

Directions

Step 1: Finely chop all of your produce and throw into a bowl. Again, this chopper works miracle. 1, 2, 3 & DONE!

Step 2: Put a pot of water to boil, add your salt & olive oil. Once it starts boiling, add your macaroni and stir.

Step 3: While that cooks you can start on your sauce. Mix mayo, dijon mustard, red wine vinegar, salt and pepper. I usually mix it in the blender. Taste it and if you think it needs more salt add it now.

Step 4: Once al dente, drain your pasta and place in a big enough bowl to fit all of your ingredients. Put it in the fridge for it to cool for 45 minutes to 1 hour.

Step 5: Once cooled, add your chopped produce and your sauce mixture. Make sure you stir it really well in order to make sure everything is distributed evenly.

Step 6: Serve cold.
